Chongqing hotpot can look complicated the first time you open the menu. There may be several soup bases, dozens of ingredients and a long list of dipping-sauce options. You do not need to order everything. A relaxed first meal is easier when you make a few decisions in order.

Choose the soup base first

The classic Chongqing style is known for a rich, spicy and numbing broth, often built around chilli and Sichuan pepper. Many restaurants also offer a milder or non-spicy section, such as a clear broth or a split pot with two flavours.

If you are unsure about your spice tolerance, ask the restaurant which options are mild. “Less spicy” may still be hot by a visitor’s standards, so explain clearly if you cannot eat chilli. If the restaurant cannot provide a suitable option, choose another place rather than forcing yourself through the meal.

Useful phrase: 我不能吃辣。 — I cannot eat spicy food.

Order a manageable number of dishes

For a first visit, choose a small mix rather than ordering every unfamiliar item. You might select one or two vegetables, a tofu or mushroom dish, a meat option and one local speciality recommended by the staff.

Ask how many people a portion is intended for. Some ingredients are served in generous plates, and you can usually add more later. Check whether an item contains offal, peanuts, sesame or other ingredients you need to avoid.

Understand the dipping sauce

Many hotpot restaurants have a sauce station or a sauce menu. Sesame oil with garlic is a familiar option in Chongqing, but sauces vary by restaurant. You can start simply and adjust after tasting.

If you have an allergy, tell the staff before using a shared sauce station. Shared utensils and ingredients may create cross-contact, so ask the restaurant directly about its ability to accommodate the allergy.

Ask how long ingredients should cook

Different ingredients need different cooking times. Thinly sliced meat, leafy vegetables, mushrooms and thicker items should not all be treated the same way. Follow the restaurant’s guidance, especially for unfamiliar cuts and raw ingredients.

If you are unsure, ask the staff to recommend cooking times. Do not eat meat or seafood until it is thoroughly cooked.

Useful phrases

  • 这个是什么? — What is this?
  • 这个辣吗? — Is this spicy?
  • 请推荐两三样。 — Please recommend two or three items.
  • 我不吃内脏。 — I do not eat offal.
  • 买单,谢谢。 — The bill, please.

Showing the phrase on your phone is perfectly fine. If you have dietary restrictions or allergies, write them down clearly in Chinese rather than relying only on gestures.

Keep your first order simple

  1. Decide whether you can eat chilli.
  2. Choose a soup base you are comfortable with.
  3. Order a few familiar dishes and ask staff for one recommendation.
  4. Check portion sizes and ingredients.
  5. Add more only after the first round arrives.

Hotpot menus and recipes differ from restaurant to restaurant. Ask the staff about ingredients, spice and cooking times rather than assuming every shop serves the same style.
